He doesn't own vineyards, but sources fruit \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003efrom tiny vineyards throughout the Canterbury region of New Zealand \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eand makes wines with basically no intervention, just loads of soul.\u003c\/span\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eLike this 100% whole cluster, skin-fermented Sauvignon Blanc, matured \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ein amphora except for a few barrels which were left untopped to \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003edevelop a flor and amplify saltiness.  Because Theo has a whole big \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ething about finding saltiness in wines and getting that character \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003einvolved, he calls it an ode to the New Zealand coastline. And wow, \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eshe's a salty one, though I might call her orange rather than white \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003egiven the month of skin contact.  It smells exotic, like green herbs \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eand fragrant flowers, with some lemon curd and tropical fruit in that \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003ewhiff too.
